There are actually a lot of Pro Hikers ing Tropical Desert Trips ails you can go on that are beautiful and not like the desert at all! I recommend Wadi Dana or Wadi Mujib, and you can book trips through @Pro Hikers or @Tropical Desert Trips . Both those areas in particular have waterfalls and canyons. Enjoy!
Where can I find a seashore?
Aqaba has great beaches and snorkeling. There are a lot of hotels and activities there. It's about a 4.5 hours drive from Amman, but you could make it in 4 or under if you drive fast...!

Try @Vinaigrette for something a little more modern-romantic with all different kinds of food (i recommend the sushi). It has a great view, especially for dinner when the city is lit up
